Heat Oven to Gas 7 425ºF 220ºC |

Caramlise 3 tablesppons of sugar with 1
tablespoon of water over a low heat |

Pour the caramel into a cake tin |

Cut the bananas length ways and place on
caramel |

Beat eggs and sugar until the mixture is
very light and creamy. Stir in butter and oil the add the flour and yeast a
little at a time. |

Stir in the rum then pour the cake batter
on top of the bananas |

Bake for 40 minutes |

Check with a skewer it should come out
clean when done |
